Ingredients: (Serves 6)
2 medium-sized apples
1 tablespoon coconut sugar
1 teaspoon cinnamon
1 tablespoon lemon juice
1 cup almond flour
½ cup gluten-free oat flour
1 tablespoon coconut flour
Pinch of sea salt
1 teaspoon baking powder
2 large eggs
¼ cup Greek yogurt
¼ cup maple syrup
1 teaspoon vanilla extract
¼ cup almond slices
Directions:
- Begin by coring the apples, peeling them, and cutting the flesh into cubes. Combine the apple cubes in a bowl with coconut sugar, cinnamon, and lemon juice. Set this mixture aside.
- In a large mixing bowl, mix together the almond flour, oat flour, coconut flour, baking powder, and sea salt.
- In a separate bowl, whisk the eggs, Greek yogurt, maple syrup, and vanilla extract until the mixture is smooth and fluffy.
- Pour the wet ingredient mixture into the bowl of dry ingredients and stir gently with a spoon to combine, taking care not to overmix.
- Pour the batter into a greased or parchment-lined round baking pan (approximately 8 inches in diameter). Place the apple mixture on top, gently pressing it into the batter, and sprinkle almond slices over the top.
- Bake in a preheated oven at 350°F for 25-30 minutes, or until the top turns a lovely golden brown. Allow the cake to cool on a rack before cutting into slices.
