Vegan Lentil Mushroom Shepherd's Pie

This recipe transforms a classic comfort dish into a wholesome vegan delight. The flavorful filling made from lentils and mushrooms is topped with a silky smooth layer of pureed potatoes, making it a heartwarming meal ideal for cold nights.

Total preparation time: 50 minutes

Ingredients: (serves 4)

Lentil and mushroom filling:

1 tablespoon olive oil

1 yellow onion, chopped

2 cloves garlic, minced

1 carrot, diced

1 stalk celery, diced

150 grams brown mushrooms, chopped

2 tablespoons tamari or soy sauce

¼ teaspoon chili powder

½ teaspoon brown sugar

400 grams (2 cups) of brown or green lentils, canned or pre-cooked

1 tablespoon tomato paste

¼ cup vegetable broth

Potato topping:

800 grams potatoes, peeled and cubed

3 tablespoons plant-based milk

2 tablespoons olive oil or vegan butter

¼ teaspoon nutmeg

Salt and pepper to taste

For garnishing: freshly chopped parsley

Instructions:

  1. Start by boiling the potatoes for 12-15 minutes until they are tender enough to pierce with a fork. Drain the water, then combine with plant milk, olive oil or vegan butter, nutmeg, salt, and pepper. Use an immersion blender or a potato masher to create a smooth and creamy mixture. Set aside.
  2. In a large skillet, warm the olive oil over medium heat. Add the onions, garlic, carrots, and celery, cooking for roughly 5 minutes, stirring occasionally.
  3. Next, incorporate the mushrooms, tamari or soy sauce, brown sugar, and chili powder. Cook for 8-10 minutes until the mushrooms have released their moisture and it has fully evaporated.
  4. Mix in the lentils, tomato paste, and vegetable broth. Stir thoroughly, heat until simmering, and let it cook for an additional 5 minutes, ensuring no excess liquid remains.
  5. Preheat the oven to 400°F (200°C). Spoon the lentil and mushroom mixture into an 8×8-inch baking dish or a similar size. Top with the mashed potato mixture, spreading it evenly with a spoon.
  6. Bake for 15 minutes, then switch to broil for 5 minutes, or until the top achieves a crispy, golden-brown crust.
  7. Garnish with freshly chopped parsley and savor your delicious meal!
