Ingredients: (Serves 6)

2 medium-sized apples

1 tablespoon coconut sugar

1 teaspoon cinnamon

1 tablespoon lemon juice

1 cup almond flour

½ cup gluten-free oat flour

1 tablespoon coconut flour

Pinch of sea salt

1 teaspoon baking powder

2 large eggs

¼ cup Greek yogurt

¼ cup maple syrup

1 teaspoon vanilla extract

¼ cup almond slices

Directions:

  1. Begin by coring the apples, peeling them, and cutting the flesh into cubes. Combine the apple cubes in a bowl with coconut sugar, cinnamon, and lemon juice. Set this mixture aside.
  2. In a large mixing bowl, mix together the almond flour, oat flour, coconut flour, baking powder, and sea salt.
  3. In a separate bowl, whisk the eggs, Greek yogurt, maple syrup, and vanilla extract until the mixture is smooth and fluffy.
  4. Pour the wet ingredient mixture into the bowl of dry ingredients and stir gently with a spoon to combine, taking care not to overmix.
  5. Pour the batter into a greased or parchment-lined round baking pan (approximately 8 inches in diameter). Place the apple mixture on top, gently pressing it into the batter, and sprinkle almond slices over the top.
  6. Bake in a preheated oven at 350°F for 25-30 minutes, or until the top turns a lovely golden brown. Allow the cake to cool on a rack before cutting into slices.
