Vegan Lemon Tart Recipe

This delightful tart balances sweetness with a zesty kick, offering a creamy and refreshing taste. Crafted with a selection of simple vegan ingredients, it serves as an ideal small dessert to enjoy with friends or family. The combination of a crunchy almond crust and a silky lemon filling creates a treat reminiscent of traditional lemon curd, yet fully vegan.

Ingredients: (suitable for a 7″ tart mold)

For the Crust:

1 cup gluten-free rolled oats

1 cup almond flour

a pinch of salt

2 tablespoons coconut oil

2 tablespoons pure maple syrup

2 tablespoons cold water

For the Lemon Filling:

3/4 cup full-fat coconut milk

1/3 cup pure maple syrup

1/3 cup fresh lemon juice

2 tablespoons cornstarch

½ teaspoon agar

Instructions:

1) Start by preparing the crust. Place gluten-free oats in a food processor and pulse until they reach a coarse flour-like consistency.

2) Incorporate the almond flour and salt into the food processor, blending until well combined with the oat flour.

3) Add the coconut oil and mix again until the texture resembles damp sand. Maintain the processor’s operation while gradually adding maple syrup and cold water, one tablespoon at a time. Stop as needed to scrape down the sides. The mixture should form sticky crumbs that easily clump together.

4) Preheat your oven to 350°F. Firmly press the crust mixture into the base of a lined 7” round tart mold, ensuring the edges are raised. Puncture the crust with a fork and bake for 12 minutes. Once baked, transfer it to a cooling rack to cool completely.

5) While the crust cools, prepare the filling. In a saucepan, warm the coconut milk and maple syrup until it begins to simmer.

6) In a small bowl, mix together the lemon juice, cornstarch, and agar using a whisk until fully dissolved.

7) Gradually introduce the cornstarch mixture to the simmering coconut milk, whisking vigorously to combine both liquids. Keep cooking for about 1 minute while continuously whisking until the mixture thickens.

8) Remove the pan from heat and allow the mixture to cool to room temperature. Stir occasionally to maintain a smooth texture.

9) Once cooled, pour the filling into the prepared tart crust. Refrigerate for a couple of hours to allow it to set. Slice and enjoy your delicious creation!
