White Chocolate and Pumpkin Pie Spice Popcorn Bites

12 cups unsalted, unbuttered popped popcorn
3 cups chopped white chocolate or white chocolate chips
1 tablespoon light olive oil
2 teaspoons pumpkin pie spice
1/2 cup toffee bits
1 teaspoon flaked sea salt, crushed
Begin by lining a large baking sheet with parchment or wax paper. Place the popped popcorn in a large mixing bowl.
In a microwave-safe container, mix together the white chocolate, olive oil, and pumpkin pie spice. Heat in the microwave on medium power for 2-3 minutes, stirring every minute until it becomes melted and smooth.
Drizzle the melted chocolate mixture over the popcorn, add the toffee bits, and gently toss everything together. Spread the mixture onto the prepared baking sheet, ensuring it covers the entire surface, and sprinkle the sea salt on top.
