INGREDIENTS:
- 1/3 cup olive oil
- 1/4 cup grated Parmesan cheese
- 4 cloves garlic, finely chopped
- 1 tablespoon brown sugar
- 2 teaspoons soy sauce
- 1/2 teaspoon red pepper flakes, or adjust to preference
- 1 pound medium shrimp, cleaned and deveined
- 8 ounces penne pasta
- Kosher salt and freshly ground black pepper, to taste
- 1 green onion, thinly sliced
DIRECTIONS:
- In a medium mixing bowl, combine the olive oil, Parmesan cheese, minced garlic, brown sugar, soy sauce, and red pepper flakes using a whisk. Place the shrimp in a gallon-sized Ziploc bag or a large bowl, pour the olive oil mixture over, and marinate for a minimum of 30 minutes up to overnight, ensuring to turn the bag occasionally.
- Bring a large pot of salted water to a boil and cook the pasta according to the instructions on the package, then drain thoroughly.
- In a skillet over medium-high heat, add the marinated shrimp along with the sauce and cook, stirring frequently, until the shrimp turn pink, roughly 2 minutes. Add in the cooked pasta and gently mix to combine; season with salt and pepper to taste.
- Serve hot, optionally garnished with extra Parmesan and sliced green onions.
