1 package Success Pearl Couscous
1 pound large shrimp, peeled and deveined
1 tablespoon seasoned salt
4 tablespoons olive oil, divided
1 can (14 ounces) chickpeas, drained and rinsed
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon smoked paprika
1/4 teaspoon salt
1/2 English cucumber, diced
1 cup cherry tomatoes, halved
1/4 cup fresh basil, chopped
1/4 cup finely chopped red onions
2 tablespoons chopped fresh dill
1 tablespoon lemon juice
1/2 cup crumbled feta cheese
Cook the pearl couscous as per the package instructions.
In a medium bowl, combine the shrimp with seasoned salt.
Heat 1 tablespoon of oil in a large saucepan over medium-high heat. Add the shrimp and sauté for 5 minutes, cooking in batches if necessary to prevent overcrowding.
In another large skillet, heat 1 tablespoon of oil over medium heat. Add the chickpeas and sauté for 8 minutes until they turn crispy and golden, stirring frequently. Mix in garlic powder, onion powder, smoked paprika, and salt. Stir well and continue cooking for an additional 2 minutes.
In a large mixing bowl, combine the cooked pearl couscous, shrimp, chickpeas, diced cucumber, halved tomatoes, fresh basil, chopped red onion, dill, lemon juice, and the remaining olive oil. Toss everything together to ensure even mixing. Top with crumbled feta cheese.
