1 egg

1 1/2 cups rolled oats

1/3 cup unsweetened shredded coconut

1/3 cup all-purpose flour

2 tablespoons brown sugar

3 tablespoons unsalted butter, melted

1/4 cup honey, divided, plus more for drizzling

1/2 teaspoon cinnamon

1 teaspoon pure vanilla extract

1 pinch salt

1/2 cup vanilla Greek yogurt

Juice of 1/2 lemon

3 strawberries, sliced

1/4 cup blueberries

1/4 cup blackberries

Preheat the oven to 350°F.

In a mixing bowl, combine the egg, rolled oats, coconut, flour, brown sugar, melted butter, 1/4 cup of honey, cinnamon, vanilla, and salt until smooth.

Transfer the mixture to a greased springform pan and bake for 20 minutes, or until golden brown.

Once baked, allow the pan to cool.
