Ingredients:
- 2 cups of Lucky Charms cereal
- 1 1/2 cups of all-purpose flour
- 1 teaspoon of baking soda
- 1 teaspoon of salt
- 2 sticks of unsalted butter
- 1 cup of granulated sugar
- 3/4 cup of packed light brown sugar
- 2 large eggs
- 1 cup of Lucky Charms marshmallow bits
- 1/2 cup of white chocolate chips
Instructions:
- Start by lining a large jelly-roll pan with parchment paper.
- In a food processor, pulse the Lucky Charms cereal for approximately 1 minute until it reaches a fine consistency. Once done, transfer the ground cereal to a large mixing bowl. Add in the flour, baking soda, and salt, then whisk the ingredients together until well combined.
- In another large bowl, use a mixer on medium speed to beat together the butter, granulated sugar, and brown sugar for around 4 minutes until the mixture is light and fluffy. Add the eggs one at a time, mixing well after each addition. Once incorporated, lower the mixer speed to medium-low and add the flour mixture in one go. Mix until just combined. Carefully fold in the marshmallow bits and white chocolate chips with a spatula or wooden spoon. Cover the dough and refrigerate for 30 minutes.
- Preheat your oven to 375 degrees Fahrenheit. Using a scoop, place rounded tablespoons of dough onto the lined cookie sheet, spacing them about 2 inches apart. Bake for 8 to 10 minutes, or until the edges are a pale golden color. Allow the cookies to cool on the baking sheet for 5 minutes, then move them to wire racks to cool completely.
