Ingredients
1 pound boneless, skinless cod, cut into four pieces
¾ teaspoon coarse kosher salt, plus an extra pinch, divided
¼ teaspoon black pepper
2 tablespoons unsalted butter
1 cup Orange Tangerine Juicy Juice®100% Juice
1 tablespoon honey
2 fresh oranges
2 tablespoons chopped cilantro or parsley
2 tablespoons finely diced red onion
3 to 8 dashes of hot sauce, to taste (optional)
- Pat the cod fillets dry using a paper towel. Season the fish with ¾ teaspoon of salt and ¼ teaspoon of pepper. In a large skillet over medium-high heat, melt the butter. Add the cod and cook undisturbed until the underside is golden brown, roughly 2 to 4 minutes. Carefully flip the fillets using a slotted spatula, reduce the heat to medium-low, and allow the fish to cook until it’s just cooked through and flakes easily with a knife, about 2 to 4 additional minutes depending on thickness.
- Transfer the fish to a plate and cover loosely with foil to keep warm. Pour the Orange Tangerine Juicy Juice®100% Juice and honey into the skillet, raise the heat to high, and bring the mixture to a boil, scraping up any browned bits from the pan. Allow it to boil while whisking occasionally until the liquid has reduced to approximately ⅓ cup and has a thick syrupy texture, which should take about 5 to 8 minutes.
- While the sauce is cooking, peel the oranges and cut them into small pieces. In a separate small bowl, combine the chopped orange, cilantro, red onion, hot sauce, and the remaining pinch of salt.
- To serve, place the fish on four dinner plates, drizzle it with the orange honey sauce, and top each fillet with the orange salsa.
