Healthy 7-Layer Taco Dip

Preparation time: 15 minutes

Servings: 12

1 can (15 ounces) fat-free refried beans

1 cup salsa

2 cups plain Greek yogurt

1 tablespoon cumin

1 tablespoon smoked paprika

1 teaspoon salt, divided

1/4 teaspoon cayenne pepper (optional)

2 ripe avocados

1/2 cup fresh cilantro, minced, divided

1 teaspoon garlic powder

Juice of 1 lime

1/2 cup scallions, minced

2 Roma tomatoes, seeded and diced

1/4 cup black olives, sliced

Tortilla chips for serving

In a small bowl, combine the refried beans and salsa. Spread this blend into a thin layer across the base of a large serving platter.

In another small bowl, whisk together the yogurt, cumin, smoked paprika, 1/2 teaspoon of salt, and cayenne, if using. Layer this mixture over the beans.

In a third bowl, mash the avocados with 1/4 cup of cilantro, garlic powder, lime juice, and the remaining salt. Spread the guacamole over the yogurt layer.

Top the dip with scallions, diced tomatoes, black olives, and the remaining cilantro. Serve with tortilla chips for dipping.
