Yields: 12 servings
Ingredients:
– 36 thawed tater tots
– 10 eggs
– 1/2 cup heavy cream or half-and-half
– 1/2 cup shredded cheese
– 2 teaspoons garlic powder
– 2 teaspoons onion powder
– 1 package (2 1/2 ounces) real bacon bits
– Salt and pepper, to taste
Begin by preheating the oven to 350°F.
Apply butter to grease a muffin tin. Place three tater tots in each muffin cup and press them down.
In a mixing bowl, combine the eggs, cream, cheese, garlic powder, onion powder, and bacon bits. Add salt and pepper according to your preference. Pour the mixture into each muffin cup, filling them to the top.
To catch any spills, position a cookie sheet underneath the muffin tin and bake for 20 to 25 minutes.
NOTE: These can be prepared in advance, so you can simply heat them in the microwave for a quick meal on busy mornings.
