Originally introduced at the State Fair of Texas, this indulgent dessert is sure to delight.

Yield: 6 Twinkies

Necessary Equipment:

  • Dutch Oven
  • Candy/Deep fry thermometer
  • Skewers (6)
  • Baking sheet lined with parchment paper
  • Paper towels

Ingredients Required:

  • 6 Twinkies
  • 3 cups all-purpose flour
  • 3 tablespoons granulated sugar
  • 3 teaspoons baking powder
  • 1 teaspoon baking soda
  • 3/4 teaspoon sea salt
  • 1 cup buttermilk
  • 1/2 cup whole milk
  • 3 large eggs
  • 3 tablespoons unsalted butter, melted
  • Canola oil for frying
  • Confectioner’s sugar for dusting

Preparation Steps:

  1. Insert a skewer into each Twinkie, then lay them on a parchment-lined baking sheet. Freeze for 2 hours.
  2. As the Twinkies freeze, mix the dry ingredients: In a sizable bowl, combine flour, sugar, baking powder, baking soda, and salt. Set this aside.
  3. In another bowl, whisk buttermilk, milk, eggs, and melted butter together. Gradually incorporate this mixture into the dry ingredients, stirring until well blended.
  4. Heat 2 inches of Canola oil in a Dutch oven over medium heat until it reaches 375 degrees Fahrenheit.
  5. For each batch, dip two Twinkies in the batter until they are thoroughly coated. Carefully place them in the heated oil and fry, turning them occasionally, until they are a golden brown on all sides, approximately 4-6 minutes.
  6. Remove the Twinkies and let them drain on paper towels, then sprinkle with confectioner’s sugar.
