You can economize by maximizing your meals through a technique known as “The Blend.” This involves combining finely chopped mushrooms with ground meat, allowing you to stretch your favorite meat-based recipes while also benefiting your finances. Finely chop your preferred variety of mushrooms to mimic the texture of ground meat, mix them together, and then cook them for your dish. For burgers, aim for a mix of 25% finely chopped mushrooms and 75% ground meat. When making tacos or chili, you can increase the mushroom ratio to 50% or even more.

Creamy Spinach, Mushroom and Lasagna Soup

Servings: 4

1 tablespoon extra-virgin olive oil

2 cloves garlic, minced

1 medium onion, diced small

8 ounces mushrooms (white button, crimini, or portabella), sliced

1 jar (24 ounces) marinara sauce

1 can (15 ounces) diced tomatoes

2 tablespoons tomato paste

2 teaspoons balsamic vinegar

1 teaspoon granulated sugar

1 tablespoon dried basil

1/2 teaspoon salt

1 teaspoon oregano

1/2 teaspoon black pepper

1 bay leaf

3 cups vegetable broth

6 lasagna noodles, broken into pieces

1/2 cup heavy cream

5 ounces fresh baby spinach

1 cup whole milk ricotta

1/2 cup shredded mozzarella cheese for topping

In a large pot over medium heat, warm the olive oil, then add the garlic, onion, and mushrooms. Sauté until the onions and mushrooms are tender, about 4-5 minutes.

Stir in the marinara sauce, diced tomatoes, tomato paste, balsamic vinegar, sugar, basil, salt, oregano, pepper, bay leaf, and broth. Increase to high heat until boiling, then reduce to low and let it simmer. Add the lasagna noodles and cook while stirring frequently until tender, approximately 15 minutes.

Remove from heat, discard the bay leaf, and mix in the heavy cream and spinach until the spinach has wilted, about 2-3 minutes.

Serve in bowls, topping each portion with a dollop of ricotta and a sprinkle of mozzarella.
