Apple Ricotta Crepes
Yield: 12 crepes (2-3 crepes per serving)
Crepes:
1 cup flour
1 tablespoon sugar
1/2 teaspoon salt
1 cup whole milk
2 eggs
1 teaspoon vanilla
butter for cooking
Apple Topping:
butter
2 tablespoons brown sugar
Envy Apples, sliced or diced
1/2 teaspoon cinnamon
1/8 teaspoon nutmeg
salt to taste
maple syrup
Ricotta Filling:
1 cup ricotta cheese
1 lemon, zest and juice only
2-3 tablespoons sugar, to taste
To prepare the crepes: In a bowl, mix the flour, sugar, and salt. Stir in the milk, eggs, and vanilla using a whisk until the mixture is smooth and has a silky consistency. Refrigerate the batter for a while.
To prepare the apple topping: In a skillet over medium heat, melt butter together with brown sugar until it bubbles and turns golden.
Then, add the sliced apples, along with cinnamon, nutmeg, and salt to taste; cook on medium-low heat until the apples become tender. Remove from heat and drizzle with maple syrup.
To prepare the ricotta filling: In a bowl, mix ricotta cheese with lemon zest, lemon juice, and sugar, ensuring it’s well combined, and then set aside.
In a nonstick skillet over medium-low heat, melt a small pat of butter.
Pour a ladleful of the crepe batter into the skillet, cooking until bubbles appear on the surface, then flip and continue cooking until golden brown. Continue this process with the remaining batter, stacking the crepes to keep them warm and soft.
Spread a thin layer of the ricotta filling onto each crepe, then fold them into quarters. Top with the apple mixture and enjoy.
