This delightful treat incorporates just a hint of honey and the fresh essence of seasonal apples and pears, offering a sweet indulgence without the added guilt.

Ingredients:

  • 4 small Granny Smith or Golden Delicious apples and/or pears (or any variety available on sale)
  • 1/4 cup unsalted almonds (chopped)
  • 2 tablespoons dried cranberries or raisins (unsweetened)
  • 1/2 teaspoon ground cinnamon
  • 2 teaspoons honey

Instructions:

  1. Preheat your oven to 400°F and prepare a small baking dish with 1/4 inch of water in it. Set aside.
  2. Remove ½ inch from the top of each apple, saving the caps.
  3. Using a spoon or a paring knife, hollow out the apples without breaking through the bottoms.
  4. In a small mixing bowl, combine the chopped almonds, dried cranberries, and cinnamon, mixing gently.
  5. Drizzle honey over the nut mixture, stirring to ensure an even coating of the almonds and cranberries.
  6. Spoon the almond mixture into each hollowed apple, replacing the tops. Arrange the apples in the baking dish and cover loosely with aluminum foil. Bake for 30 minutes, then uncover and bake for an additional 15 minutes or until the apples are soft and golden.
