Indulge in a rich, luscious, and wholly guilt-free treat! These healthy brownie truffles offer a perfect combination of delightful flavors and wholesome ingredients. They are not only raw and vegan but also free from grains and gluten. Best of all, they’re ready to enjoy in just 15 minutes while being genuinely nutritious for your body!
Total Preparation Time: 15 minutes
Ingredients:(yields 9 truffles)
1 cup soft Medjool dates, pitted
½ cup raw cashews
½ cup raw pecans
¼ cup raw cocoa powder
a pinch of sea salt
2 tablespoons of coconut milk
Optional Additions: ¼ cup shredded coconut and ¼ cup raw cocoa powder for coating
Instructions:
- In a food processor, combine the dates, cashews, pecans, cocoa powder, and salt. Blend until the mixture resembles wet sand.
- While the processor is running, gradually add the coconut milk one tablespoon at a time. Continue to blend until a sticky dough forms.
- Divide the mixture into 9 equal portions and shape each into a round truffle.
- Coat each truffle in shredded coconut or raw cocoa powder. You can enjoy them immediately or chill in the refrigerator before serving. These treats can be stored in the fridge for up to 5 days.
