Broccoli Tater Tots

Yields: 4 servings

2 russet potatoes, peeled and diced into 1/2-inch cubes

cold water

2 cups of broccoli florets

1 large egg

1/2 cup of panko breadcrumbs

1/8 teaspoon of salt

1/8 teaspoon of pepper

1/8 teaspoon of garlic powder

Preheat your oven to 400°F.

In a large stockpot, add the cubed potatoes and cover them with cold water. Place a lid on the pot and bring it to a boil over high heat. Once boiling, reduce the heat and simmer for 3 minutes. Then, add the broccoli without stirring, cover again, and cook for an additional 4-5 minutes, or until everything is tender. Drain the contents.

In a large mixing bowl, combine the egg, breadcrumbs, salt, pepper, and garlic powder until just blended.

Using a food processor, pulse the drained potatoes and broccoli together 8-10 times until finely chopped. Incorporate this mixture into the breadcrumb blend and stir until well mixed.

Scoop out tablespoon-sized portions of the potato mixture to form about 40 mounds. Shape each mound into an oval and transfer them onto a baking sheet lined with parchment paper.

Bake for 10 minutes, then flip the pieces over and continue baking for another 10 minutes or until they turn golden brown.
