Yield: 6 popovers
Popover Ingredients:
1 1/3 cups all-purpose flour
1 teaspoon kosher salt
1 1/3 cups whole milk
4 large eggs
2 tablespoons avocado or vegetable oil
Nonstick cooking spray
Cranberry Butter Ingredients:
1/2 cup unsalted butter, softened
2 tablespoons cranberry sauce
A pinch of salt
Instructions for Making Popovers: In a large bowl, whisk together flour, salt, milk, and eggs until the mixture is perfectly smooth. Add the oil and whisk once more to combine. Pour the mixture into a pitcher, cover it, and chill for a minimum of 6 hours, preferably overnight.
Preheat your oven to 375°F.
Place a 6-cup popover pan in the oven for 10 minutes to heat it up.
Take the pan out and spray it with nonstick cooking spray. Stir the batter, then divide it among the cups, filling each about three-quarters full.
Bake until the popovers are puffed up and thoroughly cooked, approximately 45-50 minutes.
To create the cranberry butter: In a medium bowl, blend the butter, cranberry sauce, and salt until thoroughly combined.
