Ingredients:
- 1 cup softened butter
- 1/2 cup granulated sugar
- 2 cups all-purpose flour
- 4 large eggs
- 1 1/2 cups granulated sugar
- 1/4 cup all-purpose flour
- Juice of 2 lemons
Instructions:
1. Begin by preheating your oven to 350°F.
2. In a medium mixing bowl, combine the softened butter, 2 cups of flour, and 1/2 cup of sugar. Press this mixture evenly into the bottom of an ungreased 9×13 inch baking pan.
3. Bake in the preheated oven for 15 to 20 minutes, or until the crust is set and lightly golden. Meanwhile, in a separate bowl, mix together the remaining 1 1/2 cups of sugar and 1/4 cup of flour. Then, add the eggs and lemon juice to this mixture and whisk until well combined.
4. Once the crust is done, pour the lemon filling over the top.
5. Return the pan to the oven and bake for another 20 minutes. The bars will firm up as they cool down.
