Ingredients:
Crust:
- 1/2 cup powdered sugar
- 1 1/2 cups all-purpose flour
- 1 1/2 sticks unsalted butter, softened and cut
Filling:
- 1 (8-ounce) block of cream cheese, softened
- 1/2 cup granulated sugar
- 1 tablespoon vanilla extract
- 1 (6-ounce) can of thawed frozen limeade concentrate
- 1 tablespoon cornstarch
- 1/4 cup sugar
Glaze:
- 1 (6-ounce) can of thawed frozen limeade concentrate
- 1 tablespoon cornstarch
- 1/4 cup granulated sugar
Instructions:
- Preheat your oven to 350°F.
- Preparing the crust: In a food processor, mix the powdered sugar, flour, and butter until a dough ball forms. Firmly press this dough into a 12-inch tart pan with a removable bottom, ensuring it fills the sides properly. Even out the surface and bake for 10 to 12 minutes, until the edges are lightly golden. Allow to cool.
- Mixing the filling and topping: In a bowl, beat together the cream cheese, sugar, and vanilla until creamy. Spread this mixture evenly over your cooled crust.
- Slice your fresh fruit and arrange it creatively on top of the filling.
- Preparing the glaze: In a small saucepan, heat the limeade, cornstarch, lime juice, and sugar over medium heat until the mixture becomes clear and thickens slightly, about 2 minutes. Allow it to cool. Brush the glaze over the tart, using only as much as desired.
- Store the tart in the refrigerator. Remove it approximately 15 minutes before serving. Cut into 8 slices and enjoy with a swirl of whipped cream.
