Ingredients:
- ½ cup chopped onion
- 1 cup chopped green bell pepper
- 1 cup diced fully cooked ham
- 1 cup shredded cheddar cheese
- 1 cup sausage
- 8 large eggs
- ½ cup half-and-half cream
- ½ teaspoon salt
- ½ teaspoon pepper
- Sliced green onions for garnishing (optional to mix in)
Instructions:
- Begin by preheating the oven to 400°F. Apply a light coating of grease to a 12-cup muffin tin. Evenly distribute the filling mixture among the muffin cups and experiment with various combinations! Sprinkle the cheddar cheese uniformly on top of each cup.
- In a medium bowl, blend the eggs, half-and-half, salt, and pepper together. Pour this mixture over the cheese, filling the cups until they are nearly full.
- Bake for 20 to 22 minutes, or until the mixture is set. Once baked, serve warm, or allow to cool before storing in the refrigerator or freezer. When ready to enjoy, reheat from the fridge for about 30 seconds or from the freezer for approximately 1 minute, or until thoroughly warmed.
