Ingredients:
- 3/4 cup granulated sugar
- 1/4 cup vegetable oil
- 1 egg
- 2 cups ube jam
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- optional violet food coloring
- 1/2 cup sifted powdered sugar
Instructions:
- In a large mixing bowl, combine the sugar and vegetable oil, creaming them together until smooth.
- Incorporate the egg and beat the mixture until it becomes light and airy, resulting in a pale color.
- Add the ube jam and vanilla extract, mixing until everything is well combined.
- Gradually integrate the flour, baking powder, and salt into the mixture, using either a spatula or an electric mixer with a dough hook. The resulting dough will be quite sticky. If desired, include violet food coloring to enhance the purple hue.
- Cover the bowl and let the dough chill in the refrigerator for a minimum of 4 hours, or optionally overnight. For a quicker method, place it in the freezer for at least 2 hours.
- Once the dough is chilled, take a spoonful of it, about 1 to 2 inches in size, and roll it in powdered sugar until fully coated.
- Position the coated dough balls at least 2 inches apart on a baking sheet.
- Bake in a preheated oven at 350°F for 10 to 12 minutes. After baking, let the cookies rest on the baking sheet for 1 to 2 minutes before transferring them to a wire rack to cool.
