Ube Crinkle Cookies

Ingredients:

  • 3/4 cup granulated sugar
  • 1/4 cup vegetable oil
  • 1 egg
  • 2 cups ube jam
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • optional violet food coloring
  • 1/2 cup sifted powdered sugar

Instructions:

  1. In a large mixing bowl, combine the sugar and vegetable oil, creaming them together until smooth.
  2. Incorporate the egg and beat the mixture until it becomes light and airy, resulting in a pale color.
  3. Add the ube jam and vanilla extract, mixing until everything is well combined.
  4. Gradually integrate the flour, baking powder, and salt into the mixture, using either a spatula or an electric mixer with a dough hook. The resulting dough will be quite sticky. If desired, include violet food coloring to enhance the purple hue.
  5. Cover the bowl and let the dough chill in the refrigerator for a minimum of 4 hours, or optionally overnight. For a quicker method, place it in the freezer for at least 2 hours.
  6. Once the dough is chilled, take a spoonful of it, about 1 to 2 inches in size, and roll it in powdered sugar until fully coated.
  7. Position the coated dough balls at least 2 inches apart on a baking sheet.
  8. Bake in a preheated oven at 350°F for 10 to 12 minutes. After baking, let the cookies rest on the baking sheet for 1 to 2 minutes before transferring them to a wire rack to cool.
