This delightful drink, developed by the hotel’s Food and Beverage Director John Cuviello and Beverage Manager Sara Davis, strikes a perfect harmony between sweetness and heat.
El Pepino from La Fonda on the Plaza
Makes: 1 Cocktail

Ingredients:
- 3 slices of jalapeño, muddled
- 1.5 oz. blanco tequila
- 0.75 oz. orange liqueur
- 1 oz. honeydew jalapeño shrub
- 1 oz. freshly squeezed lime juice
- Tajin seasoning and a lime wedge for rimming
- An extra lime wedge for garnish
Instructions:
- Moisten the rim of a cocktail glass with a lime wedge and dip it in Tajin seasoning.
- Fill the glass with ice.
- In a cocktail shaker filled with ice, mix the tequila, orange liqueur, honeydew jalapeño shrub, and fresh lime juice.
- Shake well and strain the mixture into the prepared glass.
- Garnish with a lime wedge and enjoy!
