Sweet Potato Casserole
Casserole Ingredients:
¾ stick margarine, softened
1 ½ cups granulated sugar
¼ teaspoon ground cinnamon
6 oz. can evaporated milk
2 beaten eggs
1 teaspoon lemon juice
6 – 8 cooked and mashed sweet potatoes
Topping Ingredients:
¾ stick margarine, softened
1 cup chopped pecans
1 cup crushed corn flakes
½ cup brown sugar
Combine the casserole ingredients and pour them into a greased baking dish. Bake uncovered at 400°F for 30-40 minutes or until firm.
Blend the topping ingredients and evenly distribute them over the baked casserole. Place back in the oven and bake uncovered at 400°F for an additional 10 minutes until the topping is golden and bubbling.
