St. Patrick’s Day Sandwiches
Servings: 8 sandwiches
8 ounces plain cream cheese, softened
1 cup finely shredded mozzarella cheese
salt, to taste
4 English muffins
24 slices cucumber
8 thin slices green pepper
fresh cilantro leaves
lemon juice
lemon slices for garnish (optional)
In a mixing bowl, combine the softened cream cheese, shredded mozzarella, and salt, blending until smooth.
Carefully split the English muffins and cut each half into a shamrock shape.
Evenly distribute the cheese mixture over the cut surfaces of the muffin halves.
Arrange three cucumber slices on each shamrock, placing one on each “leaf” and positioning the green pepper slice as the stem. Top each sandwich with a cilantro leaf.
