Luck o’ the Irish Mint Pie

Servings: 2 pies (9 inches each)

3 3/4 cups heavy whipping cream, divided

8 ounces cream cheese, softened

1 1/4 cups plus 2 tablespoons powdered sugar, divided

5 drops green food coloring

1 1/4 teaspoons vanilla extract, divided

1/4 teaspoon mint extract

1 bag mint chocolate candies, chopped, divided

2 chocolate cookie crusts (9 inches each)

1 bag whole mint chocolate candies

For the filling: In the bowl of a stand mixer, beat 2 1/2 cups of heavy cream until stiff peaks form. Set aside in another bowl.

In a separate bowl, beat cream cheese on high for 2 minutes. Gradually incorporate 1 1/4 cups of powdered sugar and green food coloring until smooth. Mix in 1/4 teaspoon of vanilla extract and the mint extract.

Carefully fold the whipped cream into the cream cheese mixture. Then, gently incorporate 1 cup of the chopped mint chocolate candies into the filling.

For the frosting: In a clean mixing bowl, whisk the remaining heavy cream and powdered sugar until stiff peaks form, adding the remaining vanilla extract.

Distribute the filling evenly into the two crusts and smooth the tops.

Fill a decorating bag with the frosting and pipe a thick band around the edges of the pies. Create small dollops around the edges as well.

Sprinkle 1 cup of chopped mint chocolate candies in the center of each pie and place whole candies atop each of the frosting dollops.

Chill in the refrigerator until set, approximately 5-6 hours.
