Peanut Butter Ice Cream Sandwiches

Servings: 12
24 freshly baked chocolate chip cookies (approximately 3 inches in diameter), cooled
1 1/2 cups of creamy or crunchy peanut butter
1 1/2 quarts of vanilla ice cream, slightly softened
Chopped peanuts for topping (optional)
Mini chocolate chips for topping (optional)
Toasted coconut for topping (optional)
On 12 cookies placed top side down, generously spread a layer of peanut butter. Add a scoop of ice cream onto each. Complete the sandwiches by placing the remaining cookies on top.
For an extra touch, roll the edges of the ice cream in chopped peanuts, mini chocolate chips, or toasted coconut, if desired. Arrange on a baking sheet and freeze until solid.
Enjoy them slightly frozen.
