Feta and Mint Watermelon Salad

1/4 cup lemon vinaigrette

4 cups watermelon, cubed

1/2 English cucumber, sliced into 1/4-inch half moons

1/2 small red onion, sliced thinly

1/4 cup feta cheese, crumbled

2 tablespoons fresh mint, coarsely chopped

In a large canning jar, drizzle the vinaigrette at the bottom. Layer the watermelon, cucumber, red onion, feta, and mint on top.

Seal the jar tightly with its lid and shake gently to mix the ingredients. Store in the refrigerator until you’re ready to serve.

Alternative: Greek dressing can be used instead of lemon vinaigrette.

Watermelon Frozen Pops

1 watermelon

Fresh fruit chunks (like grapes, strawberries, or kiwi)

Blend the watermelon until smooth and pour the puree into ice pop molds.

Add in chunks of fresh fruit, insert the molds’ covers, and freeze until solid.

Enjoy once they are fully frozen.
