Watermelon Salad with Feta and Mint
This recipe is brought to you by the National Watermelon Promotion Board.
Ingredients:
- 1/4 cup lemon vinaigrette
- 4 cups cubed watermelon
- 1/2 English cucumber, sliced into 1/4-inch half moons
- 1/2 small red onion, thinly sliced
- 1/4 cup crumbled feta cheese
- 2 tablespoons fresh mint, roughly chopped
Instructions:
Begin by pouring the vinaigrette into the bottom of a large canning jar. Then, layer in the watermelon, cucumber, red onion, feta, and mint.
Seal the jar tightly with the lid and shake well to mix the ingredients. Store in the refrigerator until you’re ready to serve.
Alternative: You can substitute Greek dressing for the lemon vinaigrette if desired.

Watermelon Ice Pops

Ingredients:
- 1 watermelon
- Chunks of fresh fruit (like grapes, strawberries, or kiwi)
Instructions:
Blend the watermelon until smooth and pour the puree into ice pop molds. Add pieces of fresh fruit into the molds, insert the caps, and place them in the freezer. Enjoy your icy treats once they are completely frozen.
